cheesecake stuffed strawberries
This recipe is by Melissa at Sugar Derby. I love her site because she does really clear step by step instructions like the ones below for all her recipes and crafts. So you can't really go wrong.
INGREDIENTS
- About 20 strawberries
- 8 oz pkg softened cream cheese
- 1/2 cup powdered sugar
- 1/2 tsp vanilla
- 1 sleeve of graham crackers
- 1/2 cup mini chocolate chips (optional)
Instructions
- First you will want to wash the strawberries and cut off the tops.
- Now core them! I tried two different tools. A thin ended apple peeler and a small knife. I liked the knife better. The easiest way to core the strawberries is to hold the entire berry in your hand (wrap your fingers around it) and literally just core out the center. Get as deep as you can without breaking through the bottom.

- Now to make the filling... I used my hand mixer because it 's just a few ingredients. Beat the cream cheese. Add powdered sugar and vanilla. Beat until smooth.
- Now to fill the strawberries!!! I would normally just use a ziplock and snip the end off BUT I got a piping bag for Christmas!
- Crush 3 crackers in a zip lock bag.
- Now fill the strawberries, leaving just a bit coming out the top... then sprinkle with graham cracker crumbs.

- If you want... melt about 1/2 cup of chocolate chips. Place in zip lock. Snip tip off and drizzle.

Pumpkin Carriage
This was originally posted on Hallmark Magazine which has since ceased publication.

what you'll need
- 1x 12" tall pumpkin
- 4x 4" tall gourds
- 4 ornate drawer pulls
- 3 ornate metal belt buckles
- 1 ornate lamp finial
- 2x 1/4" dowel rods (cut to the approx. diameter of your pumpkin)
- Pencil or marker
- Knife
- Craft glue
- Heavy-gauge florist's wire
- Cordless drill fitted with 1/4" bit
Method
- Trace the inside of each belt buckle onto the pumpkin and cut to create openings for two windows and a door.
- Glue the hardware over the openings.
- Remove or cut down the stem until it's even with the flesh of the pumpkin, and twist the finial into the top.
- Drill a hole through the center of each gourd.
- Insert one dowel rod into the holes of two gourds to create an axle, and secure with glue. Repeat to create a second set of wheels.
- Finish off all four wheels by inserting a drawer pull into the outside hole of each gourd for hubcaps.
- Line up the two sets of wheels next to each other at about the same width as your pumpkin. Then wrap wire from one dowel rod to the other to fasten the axles together and to create a webbing for the pumpkin carriage to sit on.
- Gently place your carriage on the wire.
